Roasted eggplant soup can be prepared by any body. In order to prepare soup we need two to three medium size egg plant ,two dished tomatoes,2-3garlic ,one large onion chopped, grinded cumin seed, one quarter chickenstock, salt, pepper and olive oil for cooking purpose.
Pre heat the oven to 400centigrade and then place the vertically sliced eggplant in the oven for 30 to 35 minutes. Remove it s skin and keep it aside. Heat 2-3 tablespoon of olive oil in large soup pot with medium to low heat, add chopped onion to it, and keep on stirring until it changes its color from pink to transparent. Add chicken stock to it and add tomato, garlic grinded cumin seed, salt and pepper with eggplant. Allow the soup to be heated from low to medium heating. Now blend the soup with blender.Garnish it with cilantro leaves. Your soup is all ready to serve. Enjoy your soup.
